A starchy, slightly sweet gluten free flour made from the root of the cassava plant. It gives sauces and pie fillings a clear, glossy finish, and sauces thickened with it freeze well.

To thicken stews and gravies, mix 2–3 teaspoons with a little cold liquid to make a paste, then stir it into the hot dish. It can also be used to soften a strong flour for cake baking.
