Badia Annatto Seeds (achiote): whole red seeds from the fruit of the achiote tree, used across Latin America and the Caribbean as a natural colouring and gentle flavouring.

Fry the seeds in oil or lard to make a rich red-orange achiote oil for colouring rice, stews, meat and fish, or grind them into pastes and rubs. They give dishes a warm golden colour and a mild, slightly earthy taste. Badia Spices was founded in Miami in 1967 by Jose "Pepe" Badia and is still a family-run business, known for its Latin and Caribbean seasonings.
